I love Trader Joe's . They have so many healthy organic options and several easy dinner ideas for us busy Moms. This is a real easy dinner and it only takes about 20mins minutes to prepare.
Ingredients:
1x Onion
3x Garlic Cloves
2x packs of boneless, skinless chicken
3 tsp Coarse Salt (If you don't have one already do yourself a favor a purchase a Totally Bamboo Salt Box - I use mine EVERYDAY!)
Juice of one lemon
Quinoa Pasta Gluten Free
Trader Joe’s Vegan Pesto Paste
Tin of Corn
Romaine Lettuce
Arugula
Strawberries
Almond Flakes
Feta
Recipe:
Sauté Onion and garlic for a few minutes
Add Chicken pieces
Add salt and Kirkland chicken spice
Squeeze lemon over chicken pieces , and cover with a lid. Simmer on low heat for 10 -15 minutes or until the chicken is cooked .
Place your pasta in boiling water and once cooked strain the pasta and add the pesto and corn.
Toss romaine, spinach, arugula green leaves together and add strawberries ,feta and almond flakes. I like to drizzle some Extra Virgin Olive Oil and Balsamic Glaze over my salad.
