Shakshuka

We absolutely love this hearty, healthy meal for breakfast, brunch or lunch.



Ingredients: (Makes 5 servings )

  • 1 Tablespoon of Olive Oil

  • 1 yellow onion

  • 1 green pepper

  • 1/2 red pepper

  • 1 clove crushed garlic

  • 1 bottle of 16oz or 460 ml marinara sauce (can use tinned tomatoes and onions)

  • Pinch of salt and pepper

  • 1 tsp Paprika

  • 1/4 cup Fresh parsley

  • 1/2 tsp Mixed herbs

  • 10x chopped button Mushrooms

  • 2 x handfuls of Spinach

  • 5x eggs


Directions


  1. Heat olive oil in large oven-safe skillet. I used my Le Creusseut .Add onion, green pepper, red pepper, garlic and sauté 5-7mins

  2. Add salt, mixed herbs, paprika ( can add chili too )

  3. Add Marinara Sauce

  4. Add mushrooms.

  5. Make small wells for each egg and break egg into well.

  6. Sprinkle with spinach and parsley

  7. Bake in preheated oven at 180 C / 350 F for 30-40 minutes for hard egg yolks.
