I do not know why I have never made my own granola before now. I am completely addicted to this homemade granola. It a perfect breakfast with yoghurt and fruit or to add to a smoothie bowl. I tend to snack on it during the day because it's so good!
Ingredients:
1 cup roughly chopped cashew nuts
1 cup roughly chopped hazel nuts or pecans
1/2 cup slivered almonds
1 cup desiccated coconut
1 cup rolled oats
3 TBS melted coconut oil
1/4 cup honey
1/4 cup maple syrup
pinch salt
1 cup dried cranberries
Recipe:
Preheat oven to 160 C or 320 F
Combine all ingredients except cranberries or raisins
Spread onto baking tray.
Bake for 40 minutes or until golden brown.
Toss after it has been in the oven for 20 minutes.
Once toasted , allow to cool and then throw in the cranberries.
Store in an airtight container.
