Home for us is a full Rusk Jar in the kitchen. Rusks are a South African snack. They are delicious and perfect to go with a cup of tea or coffee. Also a great snack to add to lunch boxes. Here is the recipe.
Recipe :
-1 kg / 2 pounds Unbleached Self Raising Flour
-3 cups Kellogs All Bran Flakes
-1 cup Brown Sugar or honey
-1 cup Sesame Seeds / mixed nuts
-2 tsp Baking Powder
-1/2 tsp salt
-1/3 cup of raisins or cranberries
-1Tbl Cinnamon
-500ml Buttermilk
-500 gram Butter
-15 ml 3 tsp Vanilla Essence
Instructions:
Melt the Butter with Buttermilk .Do not allow to boil. Add Vanilla Essence.
Mix well all the dry ingredients. Break up the bran flakes or the cereal with a big wooden spoon. Add wet ingredients to dry ingredients and mix well.
Place in Baking tray. Bake at 350 F for 40 mins Cut rusks Turn down oven to 150 F and dry out for 1.5 - 2 hours.
